Our Team

Coffs Coast Nutrition is the local area’s most trusted nutrition & dietetics practice. We are the only dietitians & nutritionists in the Coffs Harbour area that offer appointments six days per week. Our team focuses on providing individualized nutrition, exercise & wellness advice in a supportive, caring & non-judgmental environment. We have an holistic approach regarding the management, treatment & prevention of lifestyle-related diseases & you can rest assured that we provide honest, unbiased advice. Nutrition coaching is available with our friendly team, both in person & via phone or email.

Our personal trainers offer one-on-one & small group exercise sessions in our private studio gym (or outdoors, if preferred). These sessions are designed to give maximum results in a short period of time. They are effective & fun, & we guarantee that you won't feel intimidated. We recently purchased an AlterG anti-gravity treadmill which uses state of the art NASA technology to reduce loading during walking & running. This is NOT your typical treadmill, & in fact Coffs Coast Nutrition has the only anti-gravity treadmill between Coffs Harbour & the QLD border. The AlterG treadmill uses differential air pressure to enable pain-free walking or running at anywhere from 20-100% body weight. Our Nutritionists / Health Coaches are generally available:  Monday to Friday & some Saturdays.  

Our personal trainers can arrange a time that suits you, seven days per week, whether it's early morning, during the day or later in the evening. You are welcome to attend exercise sessions with or without also seeing our Nutritionists.

Louise is well known for always treating people with compassion & empathy. She specializes in Irritable Bowel Syndrome (IBS) & gastroparesis & is passionate about helping people who suffer from symptoms such as diarrhoea, constipation, abdominal pain, wind, bloating, reflux, nausea & fatigue.

Louise is the only Monash University FODMAP-accredited dietary specialist in Coffs Harbour. She has completed extensive training through Monash University regarding the treatment & diagnosis of IBS as well as implementation of the low FODMAP diet.  She has attended numerous IBS seminars & courses & can provide the most up-to-date information in this area, in addition to other lesser-known gastrointestinal conditions which can sometimes mimic IBS & need to be ruled out.  

Louise has personal experience with the low FODMAP diet, RPAH Elimination Diet / Failsafe Diet gluten-free eating. She regularly helps people with IBS, functional gut disorders, small intestinal bacterial overgrowth (SIBO) & coeliac disease, with many of her clients experiencing life-changing results.   

Louise has a special interest in anti-inflammatory nutrition, the gut microbiome & the link between dysbiosis & autoimmune disorders, arthritis, IBS, inflammatory bowel conditions, chronic fatigue, mood disorders (eg anxiety & depression), weight management, diabetes, heart disease etc. 

If you are interested in gut health, Louise can also refer you for microbiome testing. Some laboratories use more advanced testing techniques than others, so Louise can discuss this with you. Your microbiome report will provide detailed information on the types of bacteria in your gut. Once this information is available, it is possible to provide more personalised dietary advice to help improve the diversity & balance of beneficial gut bacteria. The microbiome report will also show whether the probiotics you have been taking are present in your sample & whether you may benefit from a different probiotic supplement. 

Louise is a member of the Australasian Society of Lifestyle Medicine (ALMA) which supports GPs & health professionals in the management, treatment & prevention of lifestyle-related diseases. Lifestyle medicine bridges the gap between health promotion & conventional medicine. It involves the management & treatment of ~70% of modern health problems which have a lifestyle-based cause.    

Louise has a strong interest in weight management & has motivated countless people to lose weight & keep it off.  Her study into weight loss & fad diets was published in the scientific journal “Nutrition & Dietetics” & received widespread media exposure. Louise has also supported people who have undergone BARIATRIC SURGERY for over 14 years, to ensure that they achieve the best possible outcome from their surgery.

Louise is the only Accredited Sports Dietitian on the Coffs Coast, & one of only a handful of Accredited Sports Dietitians in regional NSW. She has also completed the Level 1 Triathlon Coaching Course as well as Level 2 Coaching Principles through the NSW Academy of Sport, in addition to her personal training qualifications.

She has had the privilege of providing nutrition advice to athletes from a variety of different sports & particularly enjoys assisting endurance athletes. Prior to injuring her back Louise competed in triathlons, in events ranging from sprint (500m swim, 20k bike, 5k run) to Ironman (3.8k swim, 180k bike, 42.2k run). An in-depth knowledge of sports nutrition played a big part in her numerous wins & placings during her years in the sport.  

Louise enjoys the relaxed lifestyle that comes with living on the beautiful Coffs Coast, & although no longer able to compete in triathlons due to injury, she keeps fit by cross training with her husband Col, & more recently by running on Coffs Coast Nutrition's AlterG anti-gravity treadmill.


Melinda  Olliver

Melinda has a great way of making people feel comfortable & at ease. She provides expert nutrition advice to both our adult & paediatric clients.

Melinda has a keen interest in working with children regarding weight management (overweight & underweight), eating disorders, fussy eating, iron deficiency, behavioural problems such as ADD & ADHD, gastrointestinal issues such as diarrhoea, constipation, bloating & nausea, as well as food allergies & intolerances.  

She also sees many of our adult clients & has experience in a number of areas including diabetes (types 1 and 2), gestational diabetes, malnutrition, weight management, eating disorders, cardiovascular disease, gastrointestinal disorders (irritable bowel syndrome / IBS, ileostomy, colostomy, inflammatory bowel disease / IBD), renal conditions & liver disease. She has provided advice for people undergoing chemotherapy & radiotherapy treatment for cancer.  

Melinda has been a facilitator in the Cancer Council 'Eat it to Beat it' program which involved educating parents of school-aged children on lunchbox ideas & healthy cooking at home, shopping lists & eating on a budget.

Melinda's research on omega 3 fatty acids & inflammation has been published in the Journal of Nutrition & Intermediary Metabolism (JNIM). She has also presented her thesis at the Nutrition Society of Australia's Annual Scientific meeting in Hobart.   

Melinda is a mum of two, & enjoys spending her free time with her partner and young children.   


Ellie Starkey

Ellie prides herself on providing individualized nutrition advice to equip people with the knowledge & skills required to make healthful lifestyle changes. She believes good nutrition is about maintaining balance, not about creating unnecessary restrictions. 

Ellie offers expert nutrition care to people of all ages (including children & adults), & has a particular interest in weight management (both overweight & underweight), eating disorders, mental health & food intolerances. She is also experienced in assisting people who have pre-diabetes, diabetes, polycystic ovarian syndrome (PCOS), high blood pressure, elevated cholesterol, fatty liver etc.   

Ellie also sees our younger paediatric clients & can assist with issues such as fussy eating, failure to thrive, deficiencies (eg iron), food allergies & intolerances, weight issues etc. 

Ellie works from our rooms at Coffs Coast Nutrition & also carries out a monthly Friday clinic in Toormina - at TMC Medical. She also sees patients at Baringa Private Hospital on Wednesday afternoons.

In her spare time, Ellie enjoys surfing, swimming, yoga and cooking.


 Col  Williams  (co-owner)

Col is a Personal Trainer & Gym Instructor with Cert 111 & 1V in Fitness. He has also completed the Level 1 Triathlon Coaching Course.

Col is currently studying The Biomechanics Method Corrective Exercise Trainer certification course which is regarded as the premier step-by-step corrective exercise education program for personal trainers. This course is designed to teach personal trainers how to effectively work with people who have musculoskeletal imbalances & associated muscle & joint pain. This revolutionary approach to musculoskeletal pain relief incorporates structural assessments, corrective exercise techniques & life coaching strategies into a system that makes improved function & pain-free living a reality for people plagued by poor musculoskeletal health. The course is recognised & accredited internationally by the world's largest & most respected fitness organisations. Col will also liaise with your current medical practitioner, physiotherapist &/or exercise physiologist to ensure that you achieve the best possible outcome.

Col has competed in triathlons for some years (distances ranging from sprint to Ironman). He has also participated in adventure racing, fun runs, marathons, mountain bike riding & rogaining. Col enjoys helping people of varying abilities & fitness levels.  He has a great way of enabling people to enjoy exercise without feeling intimidated or judged. Col can also tailor programs to help you train for a specific goal such as a fun run.   


Brooke  Henry

Brooke does a great job of keeping the office running smoothly. She will be the friendly voice at the other end of the line when you ring Coffs Coast Nutrition. 

Brooke enjoys an active lifestyle with her young family. She likes to keep fit & currently competes in athletics. She also has experience in facilitating a variety of fitness programs.  

If you have any questions or would like to organize an appointment to see one of our nutritionists or one of our personal trainers, the best time to contact Brooke is usually:  

Tuesdays, Wednesdays & Thursdays:    9:00am-1:00pm & 2:00pm-2:30pm.
