Our Team

Coffs Coast Nutrition has grown to become the local area’s most trusted nutrition & dietetics practice. We focus on providing individualised nutrition, exercise & lifestyle advice in a supportive, caring & non-judgmental environment. Nutrition coaching is available with our friendly team, both in person & via phone or email. Coffs Coast Nutrition has no association with any large corporations or government departments which means that you can rest assured that we provide honest, unbiased advice. We have an holistic approach regarding the management, treatment & prevention of lifestyle-related diseases.

Our personal trainers offer one-on-one & small group exercise sessions in our private studio gym (or outdoors, if preferred). These sessions are designed to give maximum results in a minimum of time. They are effective & fun, & we guarantee that you won't feel intimidated. We recently purchased an AlterG anti-gravity treadmill which uses NASA technology to reduce loading during walking & running. This is NOT your typical treadmill.  It uses differential air pressure to reduce percentage of body weight enabling pain-free walking or running at anywhere from 20-100% body weight. Our Nutritionists / Health Coaches are generally available:  Monday to Friday & some Saturday's. os. 

Our personal trainers are happy to arrange a time that suits you, seven days per week, whether it's early morning, during the day or later in the evening. You are also welcome to attend exercise sessions without seeing our Nutritionists.

Louise is well known for always treating people with compassion & empathy. She specialises in IBS & gastrointestinal symptoms such as diarrhoea, constipation, abdominal pain, wind, bloating, reflux, nausea & fatigue.

Louise has personal experience with the low FODMAP diet, RPAH Elimination Diet / Failsafe Diet gluten-free eating. She is passionate about helping people with Irritable Bowel Syndrome (IBS), functional gut disorders, small intestinal bacterial overgrowth (SIBO) & coeliac disease, with many of her clients experiencing life-changing results. She can provide the most up-to-date information on the low FODMAP diet, having attended numerous IBS & FODMAP seminars & courses. She is currently carrying out additional studies in the low FODMAP diet through Monash University.   

Louise has a special interest in the emerging area of anti-inflammatory nutrition, the gut microbiome & the link between dysbiosis & conditions such as autoimmune disorders, arthritis, irritable bowel syndrome, inflammatory bowel conditions, chronic fatigue, weight management, diabetes, heart disease etc.    

She is a member of the Australasian Society of Lifestyle Medicine (ALMA) which supports GPs & health professionals in the management, treatment & prevention of lifestyle-related diseases. Lifestyle medicine bridges the gap between health promotion & conventional medicine. It involves the management & treatment of ~70% of modern health problems which have a lifestyle-based cause.    

Louise has a strong interest in weight management & has motivated countless people to lose weight & keep it off.  Her study into weight loss & fad diets was published in the scientific journal “Nutrition & Dietetics” & received widespread media exposure.  Louise has also supported people who have undergone gastric banding for over 14 years, as well as assisting people who have had sleeve gastrectomygastric bypass to achieve the best possible outcome from their surgery.

Louise is the only Accredited Sports Dietitian on the Coffs Coast, & one of only a handful of Accredited Sports Dietitians in regional NSW. She has also completed the Level 1 Triathlon Coaching Course as well as Level 2 Coaching Principles through the NSW Academy of Sport, in addition to her personal training qualifications.

She has had the privilege of providing nutrition advice to athletes from a variety of different sports & particularly enjoys seeing endurance athletes. Prior to injury Louise competed in triathlons, in events ranging from sprint (500m swim, 20k bike, 5k run) to Ironman (3.8k swim, 180k bike, 42.2k run). An in-depth knowledge of sports nutrition played a big part in her numerous wins & placings during her years in the sport.  

Louise enjoys the relaxed lifestyle that comes with living on the beautiful Coffs Coast, & although no longer able to compete in triathlons due to injury, she still keeps fit by cross training with her husband Col, & more recently by running on the AlterG anti-gravity treadmill.


Melinda Olliver

Melinda works part-time at Coffs Coast Nutrition. She has a great way of making people feel comfortable & at ease. She provides expert nutrition advice to both our adult & paediatric clients.

Melinda has a keen interest in working with children regarding weight management (overweight & underweight), eating disorders, fussy eating, iron deficiency, behavioural problems such as ADD & ADHD, gastrointestinal issues such as diarrhoea, constipation, bloating & nausea, as well as food allergies & intolerances.  

She also sees many of our adult clients & has experience in a number of areas including diabetes (types 1 and 2), gestational diabetes, malnutrition, weight management, eating disorders, cardiovascular disease, gastrointestinal disorders (irritable bowel syndrome / IBS, ileostomy, colostomy, inflammatory bowel disease / IBD, renal conditions & liver disease. She has provided advice for people undergoing chemotherapy & radiotherapy treatment for cancer.  

Melinda has been a facilitator in the Cancer Council 'Eat it to Beat it' program which involved educating parents of school-aged children on lunchbox ideas & healthy cooking at home, shopping lists & eating on a budget.

Melinda's research on omega 3 fatty acids & inflammation has been published in the Journal of Nutrition & Intermediary Metabolism (JNIM). She has also presented her thesis at the Nutrition Society of Australia's Annual Scientific meeting in Hobart.   

Melinda is a mum of one, & enjoys spending her free time with her partner and young daughter.

Col is a Personal Trainer & Gym Instructor with Cert 111 & 1V in Fitness. He has also completed the Level 1 Triathlon Coaching Course.

He has additional clinical AlterG certification for orthopaedic, neurological, geriatric,  bionic leg & weight loss populations. 

Col has competed in triathlons for some years (distances ranging from sprint to Ironman).  He has also participated in adventure racing, fun runs, marathons, mountain bike riding & rogaining. Col enjoys helping people of varying abilities & fitness levels.  He has a great way of enabling our clients to enjoy exercise without feeling intimidated or judged. Col can also tailor programs to help you train for a specific goal such as a fun run.   


Brooke Henry

Brooke does a great job of keeping the office running smoothly. She will be the friendly voice at the other end of the line when you ring Coffs Coast Nutrition.

Brooke enjoys an active lifestyle with her young family. She currently competes in athletics & also has experience in facilitating a variety of fitness programs.
